Stuffed Mushroom.

Stuffed mushrooms are a fabulous appetizer for any occasion.  These crabmeat stuffed mushrooms are one of my favorite finger-food party snacks. You can use any kind of mushroom that can be stuffed of course, just be sure to save the stems and include them in your stuffing mix. By the way, mushrooms are fantastic when stuffed with clams, sausage, and vegetarian options, too!

Ingredients: 

– 1 lb fresh mushroom ( about 20 )

– 1/4 cup celery finely chopped

– 2 tbsp onion finely chopped

– 2 tbsp green or red pepper finely chopped

– 1/2 lb crabmeat finely chopped

– 2 cups crackers chopped ( whole grain )

– 1/2 cup cheddar cheese shredded

-1 egg

– 1/4 tsp garlic powder

– 1/2 tsp Old Bay Seasoning

– 1/4 tsp fresh black pepper ground

– pinch of  sea salt

– 1 tbsp butter

– 1/2 cup water

– 6  slices  white cheddar cheese

Instructions:

1. Preheat oven to 350 degrees F.

2. Wash mushrooms and remove stems ( chop all the stems )

3. Heat 1 tbsp butter in a large skillet over medium heat and add the onion, pepper, celery, and chopped stems; cook about 2,3 minutes, remove from heat and set aside to cool slightly.

4. Crush your crackers with a rolling pin or food processor.

5. Combine sauteed vegetables and all other ingredients ( except cheese slices ) and mix well

6. place mushroom caps in a sprayed or buttered baking pan stem side up

7. Spoon stuffing into each mushroom capDSC_0250

8. Cover with a piece of sliced cheeseDSC_0253

9. Bake 15-20 minutes until cheese is lightly brown

Note: You can use your favorite cheese.   Also, you can serve it with wedges of lemon.
