Potato salad, Russian potato salad.
This salad is very famous in Russian culture. In Mongolia too. We call it Niislel salad. This salad can be served as a side dish or enjoyed on its own. Every family has its own recipe. I made my own. You can use boiled beef instead of Russian or Polish bologna. It’s a very yummy and colourful salad.

Ingredients:
– 5-6 medium potatoes peeled, cubed, and then boiled
– 1 small shredded carrots
– 3 hard-boiled eggs, diced
– 1/2 can of sweet peas, drained
– 1 stalk green onion, diced
– 1 tbsp diced yellow onion
– olive oil mayonnaise 1 1/3 cups
– pinch of salt and black pepper
– pinch of white sugar
– pinch of dill seasoning ( optional )
– 1 1/3 cups Russian or polish bologna diced (small)
– half of English cucumber scooping out the seeds and diced
– I like to add some red or yellow chopped peppers, optional
Instructions:
1. Place potatoes into a large pot of water. Bring to a simmer and cook until fork-tender. Remove and let cool.
2. Dice all ingredients the size of a pea. Add dressing (mayonnaise) and use a spatula to fold all ingredients together. Season with salt, black pepper, 1/2 tsp of dill and sugar to taste.
