Red Potato Salad

This is the Another delicious potato salad I absolutely love: Red potatoes provide vitamin C, vitamin B6, potassium, iron, and dietary fiber. Eaten with their skins on, they are even higher in fiber. If you don’t want add beef you can use whatever you prefer.  One time I even used leftover steak 😉 It worked very well.  My husband likes  it 😉  Good luck.

  •  6-8 small red potatoes washed and, boiled with skin
  • 4 eggs, boiled and chopped
  • 1 stalk of  celery, chopped
  •  2 stalks  green onion, chopped
  •  2 tablespoon red and yellow pepper, chopped
  • 1/2 cup english cucumber, chopped ( seeds removed )DSC_0082
  • 1 cup of  well boiled beef chopped
  • pinch of salt
  • 1/2 teaspoon sugar
  • 1/4 teaspoon freshly ground black pepper
  • pinch of dry dill
  • 1  1/2 cups   ( you can put more if you need ) olive oil mayonnaiseDSC_0105
  • To make:

1.  In a medium-sized saucepan then add your eggs and cold water. Boil about 12-15 minutes.  Remove the eggs and either run under cold water or submerge into a large bowl filled with water and ice.IMG_47452. Boil potatoes with skin , in salted water, 15-20 minutes, or until tender. Rinse with cold water.  let cool, and cut the potatoes into chunks.

IMG_47433. In a large bowl, combine the potatoes with eggs, celery, green onions, beef, peppers, and cucumber.

4. In a small bowl, whisk together the mayonnaise, salt, pepper, dill,  and sugar.  Set aside.

5. Add to the potatoes and stir gently to combine.
