Oven Baked Crispy Parmesan Salmon

Good morning all,

 I’m having my coffee and posting my one of all time favorite recipe. I’m sure you will love it too if you like salmon. This crispy garlic Parmesan salmon is ready on your table in less than 20 minutes with a few ingredients. It’s so quick and easy. With a fresh green salad it’s so good. Believe me. I could eat it for breakfast, lunch, and supper 😉

Golden, crispy crumb filled with delicious flavors on top of flaky salmon. Sounds good right. You can add lemon and limes.

This oven baked salmon with Parmesan herb crust is definitely one of my favorites. It has just a few ingredients and so quick and easy to prepare, too! 

Serves: 6-8

Ingredients: 

  • 1 whole wild salmon fillet (1.5-2 pounds)
  • 1/3 cup plain breadcrumbs (you can use Italian breadcrumbs if you like)
  • 1/3  cup grated Parmesan cheese 
  • 2,3 garlic cloves, minced (or you can use garlic powder)
  • 2-3 tbsp fresh herbs, finely chopped ( I like to use thyme, chives, dill  and oregano)
  • 3-4 tbsp melted unsalted butter
  • sea salt and freshly ground black or peppercorn

Directions:

  1. Make sure you position your oven rack to the middle of your oven before preheating it. For this recipe, you can use a skin on or off the side of salmon. We love skin on as the oils keep the salmon so juicy underneath while it bakes. I line my baking sheet with aluminum foil, but you can use parchment paper instead.
  2. Preheat oven to 400 º F. Line rimmed baking sheet with parchment paper or aluminum foil for easiest cleanup.
  3. Place salmon, skin side down, onto lined baking sheet and sprinkle some sea salt and freshly ground pepper. ( I like to use peppercorns)  Cover salmon with another piece of parchment paper. Bake salmon for 6-8 minutes. Remove from oven and remove the top piece of parchment paper. 
  4. In a small bowl, combine bread crumbs, Parmesan cheese, garlic, melted butter, and herbs together.
  5. Sprinkle the mixture over the top of the salmon. Return to oven uncovered and allow to bake until the cheese has melted, the baked salmon flakes easily with a fork.  It turns out tender and flaky and full of all of my favorite flavors.
  6. This flaky, crunchy herb crust salmon is so good.  Serve with your favorite salads, rice, noodle and of course good wine.( Japanese plum wine is best)
