Orange Marmalade Chicken

Orange Marmalade Chicken is another outstanding and easy chicken dish to serve your family.  My family loves this chicken dish. This is a very simple chicken dish to make, plus very tasty – so give it a try.  I like to serve it with wild rice, ( or quinoa) veggies, and fresh green salad. Chicken thighs are perfect for this dish.

Ingredients:

  • 1/3 cup orange marmalade
  • 2 tbsp  balsamic vinegar
  • 2 tbsp Dijon mustard
  • about 1  1/2 tsp chopped fresh rosemary
  • 3 tbsp olive oil
  • 4-6 chicken thighs
  • salt and pepper to taste
  • 1 tbsp unsalted butter
  • 2 medium yellow onions thinly sliced
  • 1 cup chicken stock

Directions:

  1. Preheat the oven to 350 F (180 C)
  2. In a small bowl combine marmalade, balsamic vinegar, mustard, and chopped rosemary. Divide in half. Whisk 1 tbsp of oil reserving remainder, into half of mixture. Brush marmalade mixture with oil on to the chicken thighs. Season with salt and pepper.
  3. Heat remaining 2 tbsp oil and butter in a large skillet on medium high heat. Add onions to pan and saute, stirring for about 1-2 minutes. Add stock and remaining marmalade mustard mixture. Bring to boil. Place the chicken skin side up into nonstick ovenproof dish ad onion mixture.
  4. Bake uncovered for 35-40 minutes. Every 10 minutes check the chicken and take  spoonful onion mixture from the dish and pour over the chicken. It gives the chicken moist.
  5. Remove the chicken and pour the onion sauce over the chicken serve with steamed rice. It’s so good. My kids love this this.
