Meatball stuffed jumbo shells.

This dish is very easy to make, and my boys are love it with garlic bread. I added  fresh green salad and some garlic bread for a delicious Italian feast. (A salad would make a great side dish) If you’re planning to make a Italian food tonight try this yummy, wonderful dish.  Good luck and enjoy 😉

Ingredients:

  • 1 box of  jumbo pasta shells (340 gr) (only use whole ones after cooked)
  • 400 gr meatball ( check my basil meatball recipe) if frozen thaw them first
  • 2 cups pasta sauce (marinara sauce)
  • 1 cup chicken or beef stock
  • 1 tbsp olive oil
  • 1/2 yellow onion chopped
  • 3,4 white mushroom
  • 3,4 tbsp chopped red pepper
  • 2,3  basil, chopped
  • 200 gr mozzarella cheese, shredded
  • 1/2 cup parmesan cheese
  • salt, pepper to taste

Directions:

  1. Preheat the oven to 350 F. Spray baking dish with nonstick cooking spray.
  2. Heat oil on med-high heat and add onion, pepper and mushroom for cook for 2 to 3 minutes, then add chicken or beef stock, meatballs, 1 cup pasta sauce, salt and pepper to taste. Cook until sauce is thicken about 20-30 minutes. Remove from heat. DSC_0634DSC_0635DSC_0642DSC_0649
  3. Boil the jumbo pasta shells according to the package directions.  Drain and rinse shells with cool water.DSC_0651
  4. In a small bowl mix with ricotta cheese with some freshly ground black pepper and salt.
  5. Add one small spoonful of ricotta cheese and then one meatball with some sauce to each shell.DSC_0654DSC_0659
  6. Pour 1 cup of pasta sauce in bottom of  baking dish. Place the stuffed shells now in the baking pan. Top each shell with sauce, mozzarella  cheese and parmesan cheese.
  7. Bake on lower rack 15-20 minutes and then place on upper rack 15-20 minutes. Sprinkle more parmesan cheese right before you serve. A salad would make a great side dish. And garlic stick or garlic bread.DSC_0665DSC_0671
