This sweet mango beef stir-fries with sweet peppers are one of the quickest and easiest home recipes. It’s vibrant, super-simple food with heaps of flavour and fresh crunchy vegetables. If you like Asian sweetmeat dish you must try this one. It’s so good believe me.
Ingredients:
- 2 medium mangoes
- 1Lb (450 gr) sirloin tip steak
- 1/4 cup (60 gr) brown sugar
- 1/4 cup (60 gr) Korean soy sauce
- 1/4 cup (60gr) Korean rice cooking wine
- 1/4 cup (60 gr) cornstarch
- 3 cups of oil + 1 tbsp oil
- 1 tbsp sesame oil
- 1 tsp sesame seed
- 1/2 tsp ginger minsed
- 4,5 cloves garlic minced
- 1/2 red pepper, cut in thin strip
- 1/2 yellow pepper, cut in thin strip
- 2 green onions, thinly sliced
- Some red onion thinly sliced
- 3,4 mushrooms thinly sliced
- red and black pepper to taste
Directions:
- Slice off each mango cheek arount the seed and thinly slice. Discard peel and cut remaining flesh away from seed. It’s ok if pieces are uneven.
- In medium bowl whisk sugar, soy soauce, and vinegar. Set aside.
- Cut steak, peppers, mushrooms, green and red onions into thin strips. Place beef In a large shallow plate and toss with cornstarch for evenly coating.
- Partially fill a deep fryer or large deep pot with oil. heat to 375F (190C). Deep fry beef in 2 batches until crispy or about 2 minutes. Remove to a papertowel lined plate.
- Add remaining 1 tbsp oil to wok or skillet set over medium – high heat. Stir fry all the veggies until softened slightly. Season with freshly ground peppers. Pour reserved sauce. Cook about 2,3 minutes. Add beef, sesame oil and seed. Stir to lightly coat. Garnish with green onions and more sesame seed. Serve with steamed white rice and side dishes.
