Rich decadent Flourless Chocolate cake. Who doesn’t like chocolate cake or chocolate 😉 I love it? It’s one of my favorite treats in the world.

Serves: 12-15
Ingredients:
- 1 cup chocolate chips or Lindt dark chocolate 70% ( I used Lindt dark chocolate 70%) or Ghirardelli 60% dark chocolate
- 1/2 cup unsalted butter
- 1/2 cup brown sugar
- 1/4 cup white sugar
- 3 eggs, at room temperature
- pinch of salt
- 1tsp vanilla extract
- 1/2 cup sifted Dutch process cocoa, preferred
- fresh berries for garnishing, optional
Chocolate ganache ingredients:
- 175 гр chocolate chips
- 1/2 cup whipping cream
Directions:
- Preheat the oven to 350°F. Arrange a rack in the middle of the oven.
- Lightly grease a metal 8″ round cake pan, cut a piece of parchment paper to fit, grease it, and lay it in the bottom of the pan.
- Place the butter and chopped chocolate or chocolate chips in a large microwave-safe bowl. Microwave on the high setting in 20-second bursts, stirring between each burst until the butter and chocolates are completely melted, 50 to 60 seconds total. Set aside to cool until the chocolate is warm, but not hot, 2 to 3 minutes.
- Now add the sugar, salt, and vanilla extract and stir gently to combine.
- Add the eggs one by one and mix well until smooth. Now sift the cocoa powder and add into the cake mixture stir until just combined. Don’t over mix.
- Pour the batter into your prepared pan. Bake about 25-30 minutes until the cake has risen ever-so-slightly in the center.
- Remove it from the oven, and cool it in the pan for 10 minutes. Then loosen the edges of the pan with a table knife and turn it out onto a serving plate. Cool the cake completely before glazing.
- While the cake is cooling, make the chocolate ganache. Combine the chocolate and cream in a medium microwave-safe bowl, and heat until the cream is very hot so it will melt the chocolate. Check every 30 seconds and stir. It’s going take about 1minut 30 seconds. Remove from the microwave, and stir until the chocolate melts and the mixture is completely smooth.
- Spoon the chocolate ganache over the cake, spreading it all over. Let the ganache set up for a few hours before cutting and serving the cake.
- Garnish with berries or dust cake with powdered sugar before serving. Slices can also be reheated for 20 to 30 seconds in the microwave before serving.
Note: 1. For cleanest slicing, use a sharp knife dipped in hot water and wiped dry. Repeat dipping knife in hot water and wiping dry for each slice.
2. Flourless Chocolate Cake Recipe is that it needs to chill for a while about 4-6 hours.
