Deep Fried Eggplant

This shiny, purple veggie is the perfect base for meatless dishes or a welcomed addition to burgers, seafood dishes,  appetisers and pastas. Eggplants  have plenty of minerals and vitamins, as well as antioxidant compounds that may reduce cholesterol.   An easy and quick way to prepare eggplant, and tasty too !

Ingredients:

  • 1 medium eggplant, cut crosswise into 1/4-inch thick slices and then quarteredDSC_0002DSC_0012DSC_0013
  • 1/3 cup all-purpose flourDSC_0009
  • 1 cup Italian  Style bread crumbsDSC_0007
  • 3 eggs, lightly beaten
  • pinch of salt, black and red pepper
  • 1 cup canola oil, for deep frying
  • Directions:
  • Place the flour, egg, and breadcrumbs each in 3 small bowls.DSC_0005
  • Add salt and peppers to the egg and whisk to combine.DSC_0008DSC_0010
  • Dredge each eggplant slice in the flour  coating it thoroughly and shaking off the excess, coat it with the egg mixture, and dredge it in the breadcrumbs, pressing on the crumbs to make them adhere. Transfer the eggplant as it is coated to paper towels and let it dry slightly.DSC_0017DSC_0019DSC_0022
  • In a deep, heavy skillet heat 1/2-inch of oil.
  • Fry the eggplant in batches for 1 minute on each side or until golden.DSC_0025
  • Drain on paper towels; sprinkle lightly with salt before serving if desired.
  • Serve with any sauce or lemon edges.DSC_0023DSC_0032
