For a quick snack or delicious party appetizer look no further than the ever healthy cucumber! It can be used in so many ways, but one of the best is to create rolls! For best results slicing a cucumber with a mandoline will be the best way to go. Using the 2mm setting will allow you to get a cucumber slice that is even and incredibly thin allowing you to create cucumber slices that will easily roll. Cucumber slices that are too thick can be difficult to roll, and they will come unraveled with little prompting. When cutting a cucumber by hand, this will often be the case. Using a vegetable peeler will often fix this problem, but not always. In the event that you have cucumber slices that prove difficult to keep rolled, simply affix them using toothpicks. Ingredients:
For 12 bites:
- 1 cucumber (preferably organic, because we’ll keep a bit of skin)
- 6 thin sliced mortadella
- 12 cherry tomatoes, washed
- 1 tablespoon of salad herb seasoning
- 8 sliced mozzarella cheese ( if you like cheesy one )
- some fresh ground black pepper to taste
- 2-3 tablespoon cream cheese ( original )
Directions:
- Wash the cucumber then remove a first strip of skin using a vegetable peeler or a mandoline slicer. You can throw it because there is not enough flesh on it for a proper use. Then make thin strips of cucumber just like the pictures. To make nice seedless ribbons, start with one side of the cucumber and make strips until you reach the seeds in the center of the cucumber. Then return the vegetable and do the same thing until reaching seeds again.
- Divide the mortadella in 4 pieces (each slice )
- Divide the cheese in 3 pieces ( each slice )
- In a small cup or soup bowl put cream cheese, black pepper, and salad herb seasoning. Stir well.
- Spread the cheese mixture across the cucumber slices.
- Spread thinly sliced mortadella across the cucumber slices.
- Now spread the cheese slices across the cucumber slices ( if you using )
- Roll up carefully, using a toothpick to close.
- Keep refrigerated until serving.
