Colorful Beet and Apple Salad.

Hello everyone,

Today I made one of my favorite salad.  This Beet and  Apple Salad are not only delicious and so pretty, but the crisp combo of earthy sweetness from the beets and tarty sweetness from the apples is also a perfect combo with any meal.  It’s also very good for you ;).  You can use a raw beet or cooked beet. I like to cook my beets. Just falling in love with this salad.

You really have to try this salad.

Serving 4-6

Ingredients:

– 3-4 med raw or cooked  beets, peeled and cut into matchsticks (I like to cook my beets)

–  1-2  granny smith apples  peeled and cut into matchsticks

–  5-6 cups any mixed salad greens

– 1 avocado peeled and finely sliced  (optional)

–  1 cup ( 150 gr crumbled  goat or feta cheese

–  Toasted walnuts (about 1/3 cup) DSC_0372DSC_0381

– 2 tbsp apple cider vinegar,   (you can also use half  of the fresh lemon juice or your favorite mixed citrus juice)

–  3 tbsp of  extra virgin olive oil

– 2 tbsp orange juice

–  pinch of salt and black pepper

– 1/2 tsp sugar DSC_0374

To make:

1. Place the beets into a large pot and cover with water. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer for about 10 minutes.  Then let it cool. DSC_0369

2. Wash, peel and cut your beets and apples. Reserve in a large bowl.

3. In a medium bowl, make your citrus vinaigrette by adding apple cider vinegar, orange juice, ( lemon juice) olive oil, sugar,  salt, and pepper. Whisk together, taste and adjust to your liking.  Drizzle over beets and apples and toss with a pair of tongs.

4. Plate individually by making a bed of salad greens, top with a pile of beet mixture, sliced avocados and garnish with cheese and walnuts. Spoon some extra dressing on top. DSC_0390
