Today I’m posting one of my favorite and very easy-to-making chocolate meringue cookie recipes. These chocolate meringue cookies are made from just 5 ingredients. Light and airy, meringue cookies are a lovely little treat. I love to have them with my coffee.

Ingredients:
- 2 egg whites, at room temperature
- pinch of salt
- 1/2 cup granulated sugar
- 1tsp pure vanilla extract
- 150 gr dark or milk chocolate, melted and cooled down a little bit
To do :
- Preheat oven to 350F. Coat 2 baking trays with parchment paper.
- Melt the chocolate first. Because the chocolate needs to cool down before folding into the meringue batter. You can melt the chocolate in a double boiler or in the microwave.
- Meanwhile using an electric mixer beat the egg whites with salt on low speed until foamy. Then increase the speed to medium and beat until the egg whites are fluffy and hold soft peaks.
- Now increase the speed to high and add sugar a few tablespoons at a time, beating for 3,4 minutes, or until the egg whites are glossy and hold stiff peaks.
- Using a rubber spatula gently fold the chocolate and vanilla into egg whites just until well combined. Spoon by rounded tablespoons onto prepared pans. Spacing them about 2 inches apart.
- Bake for 13-14 minutes, or until the cookies are dry and crisp on top and moist in the center when tested with a toothpick. Do not overbake.
- Remove the meringue from the oven. They can cool completely right on the baking sheets. These cookies can be stored in an airtight container at room temperature for up to 2 days.
