Bulgogi

Bulgogi is one of Korea’s most popular beef dishes that is made from thinly sliced sirloin or another prime cut of beef (rib eye). It is usually marinated in a mixture of soy sauce, sesame oil, black pepper, garlic, onions, ginger, and sugar for two to four hours to enhance the flavor and its tenderization. Bulgogi is traditionally grilled but broiling or pan-cooking is common as well.  This dish is usually served with a side of lettuce, spinach, or other leafy vegetable and steamed white rice.  Bul is the Korean word for fire and gogi is meat, therefore, it translates into fire meat. However, it’s not quite spicy in taste but somewhat on the sweet side. DSC_0341

INGREDIENTS:

– 500 gr thinly sliced beef (sirloin or rib eye )

– 4 tbsp sugar

– ½ cup soy sauce

– 2 cloves  finely chopped garlic (can be crushed but remove buds before serving)

– salt and pepper t taste

– 3-4 tbsp Mirin (sweet  cooking seasoning , optional)Mitzukan-Mirin

– 1 tbsp sesame oil

– 1-2 tbsp toasted sesame seed

1 tbsp olive oil 

– 2 stalks green onions chopped

– 1 big yellow onion

– 1-2 medium thinly sliced carrots (optional)

–   1 whole sliced green pepper ( optional )

– 3 tbsp  Bulgogi sauce, or pear juice (Optional. If you like sweet meat you can add Bulgogi sauce or pear, apple juice)DSC_0293

COOKING DIRECTIONS:

  1. Mix all the marinade ingredients in a bowl. (except sesame seeds, and sesame oil)
  2. Add the sliced beef and mix well. Cover the bowl with food wrap (or move the meat into a glass container with a lid) and marinate the meat for at least 4 hours in the fridge. (If you have more time, you can also marinate it overnight for an extra enhanced flavour).  Every hour gently mix meat so all the meat can marinate. 

 

3. Preheat the wok/skillet on the stove on medium high heat and once heated add the olive oil and spread it well with a spatula.

4. Add the onions and garlic cook about 2,3 minutes.DSC_0302

5. Now add the meat stir fry about 10-15  minutes.DSC_0305

6. Add the veggies, and sesame oil  Cook  another 3,4 minutes.  When the meat is nearly cooked toss the sesame seeds. Stir, and serve with rice and side dishes. Korean side dishes are the best with Bulgogi. If you don’t have it you can serve with any salad and sliced fresh veggies.

Note: 

  • If you want to spice it up just add red pepper powder to your marinade. (You can purchase the hot pepper paste and red pepper powder at your local oriental market). 
  • Pre-sliced Bulgogi meat can be purchased at a Korean grocery store. If you don’t have access to a Korean grocery store, you can buy the meat at your local butcher and ask them to thinly slice it. Just remember it has to be “paper thin”. If you’re determined to cut the meat yourself at home, slicing is easier when it’s still partly frozen. 10620621_616571135151322_6787496438368692567_n
