Homemade Oatmeal Chocolate Chip Cookies.

These are the best oatmeal chocolate chip cookies… Chocolate lovers will love the chips, and whole-grain seekers will appreciate the natural oats.
Oatmeal cookies, when done right – and by that, I mean soft, chewy, and not over-baked – are some of my favourites. The chewiness, the perfect hearty texture, the nuttiness of the oats, and all the chocolate made these a new favourite twist on a classic.
 If you like raisins or nuts in your oatmeal cookies,  feel free to add a handful of either.

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar
  •  1 egg
  •  2 teaspoons vanilla extract
  • 1  1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon   salt
  • 1 cup ( 6 oz )  chocolate chips
  • 2 cups quick oats
  • 1/2 cup of chopped nuts or raisins, if desired ( I like to use raisins)

To make:

1. preheat oven to 350 F.

2. Cream together butter and sugars until smooth.

 

 

3. Add egg and vanilla and blend well.

4. Stir in flour, baking soda and salt. Stir in chocolate chips.

5. Drop by tablespoons onto a greased baking sheet and bake for 8-10 minutes, until golden brown around the edge. (I made some of them in a Madeleine Pan. It worked very well.
