Baby Spinach Salad with Roasted Almonds, Sesame Seeds and Dried Cranberry

This fresh spinach salad is garnished with cranberries and almonds, and tossed with a sweet and savory homemade dressing. This is very quick simple salad.  You will love it. I made this salad for my friends on last Christmas Day. They loved it 😉  Please try to use organic spinach. Also mix everything right before you serve. Please enjoy 😉

Ingredients:

  • 200 gr pre washed organic baby spinach 
  • 2 tbsp or more blanched and slivered almonds
  • 2 tbsp toasted sesame seeds
  • about 2 tbsp thinly sliced red pepper
  • 2 tbsp chopped cilantro
  • about 2 tbsp thinly sliced red onions
  • 1/4 cup dried cranberry
  • 4 tbsp vegetable oil or light olive oil
  • 3 tbsp rice rice vinegar
  • 1   1/2 tbsp sugar
  • 1 tbsp unsalted butter
  • salt and pepper to taste

Directions:

  1. For this recipe you can use either store bought toasted sesame seeds or you can toast up some white sesame seeds yourself.  I tried to toast the almonds and sesame seeds at the same time. (The almonds can be substituted for just about any other nut that you like) In a medium saucepan, melt 1 tbsp butter over medium heat. Cook and stir almonds and sesame seeds  in butter until lightly toasted. Remove from heat, and let cool.
  2. The dressing is incredibly simple to make. You’ll just combine  oil, rice vinegar, sugar, salt, and  pepper  then whisk or shake until the sugar is completely dissolved.
  3. In a large bowl, combine the spinach with the toasted almonds, sesame seeds, chopped veggies and cranberries. Drizzle dressing over salad and toss.  Serve immediately after adding dressing.
