Carrot salad with walnuts.

This carrot salad is perfectly simple, healthy and delicious.  In Mongolia, we make this salad for any kind of celebration. You can make it with a raisin or walnuts.  If you have carrots in your vegetable bin to use up, you can quickly grate them in your food processor or vegetable grater.  Otherwise, just buy the bagged pre-grated carrots from the produce department — they work just as well.   Enjoy this easy colourful healthy salad.

 

Serving: 4

Ingredients:

  • 2 big carrots peeled and grated
  • 1 clove garlic peeled and grated
  • 10-12 walnuts coarsely chopped, lightly toasted
  • salt and freshly ground black pepper to taste
  • 1/2 tsp sugar
  • 5,6 tbsp mayonnaise
  • if you’re using raisin use 1/4 cup

Directions:

  1. Toast walnuts on a dry skillet until golden then remove from heat to cool (keep an eye on them; they can burn quickly).
  2. If you’re using a raisin soak them in 1 cup boiling hot water for about 1 minute to soften them up. Drain well and set aside.
  3. Peel the carrots and grate them.  Grate the garlic too. Put them in a medium bowl.
  4. Add soaked raisin and walnuts to the bowl.
  5. In a cup combine mayonnaise, salt, pepper and sugar. Pour the dressing over salad and stir until combined.  Refrigerate until ready to use. Stir well before serving.  This salad is perfect for any meal.

    I wanted to do something different with my carrots and thought of a friend from Kazakhstan’s carrot salad. Unfortunately I have lost touch with her over the years. She made something similar to your recipe. So, thanks for the recipe
