A healthy and tasty chicken salad with a fruity twist…
Enjoy this fruit-studded chicken salad with whole-grain crackers, or spread it on whole-wheat bread for a sandwich. The balance of sweet grapes with fragrant curry elevates chicken salad perfect with any meal.  (You can make this salad with turkey too. It’s a very good idea after Thanksgiving 😉
Sometimes I just eat as a lunch or dinner with organic sesame seed crackers.  It’s so good. Believe me 😉

Ingredients:
– 2 cups cooked and chopped chicken breast (skinless, chicken breast)
– 1 or 2 stalks celery, chopped (or cilantro)
– 2 tbsp red onion,chopped
– 1  1/2 cups seedless green or red grapes halved
–  pinch of salt, pepper to taste
– 1 tsp or more curry powder
– 1/2 tsp sugar
– 1/2 or more mayonnaise

Directions: 
1. Wash all the veggies and grapes. Pat it dry and chop them. Chop the chicken too.

2. In a large bowl place the chicken, celery,  grapes, and onion.

3. In a small cup combine mayonnaise, curry powder, salt,  pepper, and sugar stirring with a whisk until well blended.  Pour over the chicken mixture stir well until all well combined. DSC_0282DSC_0295dsc_0336
4. Cover and chill about 30 minutes or more. Serve with bread,  crackers or as a side dish. (you can make a sandwich too.
Note: If desired, use nonfat mayonnaise. You can add raisins, nuts if you want.
