Fried egg with mixed greens

Today I’m cooking only for myself, one of my favorite meals is a fried egg on a bed of steamed greens with a lots of cilantro. It’s fast food that’s high in protein, meatless and loaded with vitamins and minerals, and simply delicious. You can use any greens you like. Spinach, kale, or mixed greens… I had a mixed greens this time.  Enjoy 😉

Ingredients: 1 or 2 eggs for each serving/ 1 large bunch of kale or other greens / 1 tbsp  olive oil or coconut oil/ 1 clove garlic, chopped (optional)/some chopped red onions/ 1/2  sliced avocado/ sea salt & freshly grated pepper. Also some fresh lemon juice.

Directions:

  1. Heat oil in a large skillet.
  2. If you’re using garlic, and onion saute for a minute or two.
  3. Lightly saute kale, or greens coating with oil. Cover skillet and steam greens  until wilted but still bright green, adding a tablespoon or so water, if needed.
  4. Make a round opening in greens  large enough for a large egg.  Crack egg and place in opening on bed of  greens and cook until yolk looks cloudy and firm.
  5. Sprinkle with salt and pepper.  Add some lemon juice. Remove from the heat. Enjoy with slice of whole grain bread and sliced avocadoes.
