Ingredients:
- 2- 3 ripe, large tomatoes, washed and sliced
- 1 block feta cheese, or herb cheese crumbled
- Fresh basil, mint, or cilantro, chopped
- 1 tbsp balsamic vinegar
- 1 tbsp lemon juice
- half lemon zest
- freshly ground black pepper
Directions:
- Slice tomatoes to 1/8- to ¼-inch thickness. Arrange the tomato slices in your dish.
- Crumble the cheese you’re using. Any cheese you can use. I used, feta and herb cheese also flavored cheese.
- Whisk together the olive oil, lemon juice, lemon zest, pepper and balsamic vinegar in a small bowl. Pour mixture over the tomatoes, covering evenly. Top with crumbled cheese. Cover, and refrigerate at least 1 hour before serving.
